@lefticus For instance say I had a script, and I attach it to my entity, would I be able to keep that script with all the changed variables in memory, and then call functions on that script on each frame/cycle.

@AyphixLLC your best bet for something like that would be to assign a chaiscript function to the entity then pass in a state object with each call to your frame/update

@lefticus Ok, and to be clear, because I've done a lot of searching, there is no inheritance in Chaiscript right? I found code in the samples with some pseudo inheritance but nothing like inheriting from an actual class in chaiscript right?

correct. To inherit a C++ type in chaiscript would require a pre-processor, which we don't have (because we wanted to avoid having one) to inherit a chaiscript class in chaiscript just hasn't been implemented yet.
