When teaching DS, it is also important to focus on what to measure and how do we think we can measure it. Because things can get really complex fast. How to get the data. It often means, approaching a lot of people or scraping bad websites. I refer to my own experience now. The biggest hurdle is that the data is not in databases, but in the heads of people. Small non-profits work still with low tech solutions. The most sophisticated tool is the e-mail and face to face communication. Because of this and the general aversion to techy abstractions I had to postpone my idea untill I can do it most unintrusively.
