WAIT: So what I did was to reset, restart everything... (including the dishwasher, you never know...) and then doing things in steps. First register to the network, without doing the proxy setup. Do some traffic. (As it appears is described in your link). Then I setup the proxy parameters. It disconnected Wifi. I paused Proxyman... Wifi reattached and went on
Weird but far better than before. I can now enable VPN and achieve company's network. So I am glad about it.
and same steps followed on my friend's mac machine and it worked like charm

it turns out that the port 9090 is locked by security team
he just ask the security guys to open it, and it works
Additionally, you can try to forget the network on iPhone and try again
Hi @NghiaTranUIT Thanks for getting back. Trust me, with both Charles and Proxyman, I did all possible ways what you suggested and much beyond that and it did not work, and then after struggling with this issue for nearly 3 days, I figured out it was Endpoint Security Checkpoint VPN. This culprit blocked all incoming connections by creating it’s own firewall as cpfw.kext. Even removing Endpoint Security Checkpoint VPN completely did not work and I literally started pulling my hair out until I deleted this 'kext' file. So please bookmark this as you might wanna see this coming from folks. It's Endpoint Security Checkpoint version VPN E82.00 with MacOS Catalina 10.15.5.

Is there an existing method for persisting specific traffic to file on a continuous basis?
I want to have traffic to and from specific endpoints go into a specific file, then be able to open that file later and add to it further.
I don’t think that is covered by existing issues.
But I’m not sure.
you do achive it by pining the endpoint to the left Panel (Right-click on Domain -> Pin). Then all traffic will appear on this node -> You can export it (Right Click -> Export -> Proxyman Session or HAR). Then you can use it later, by dragging the file to Proxyman -> All old traffic will be persistented
If you like to save entire Session, you can do it do, by going File Menu -> Save Session
