Join without camera/mic, text chat, recording a conference.
Also, may be out of scope of this room, but do you know if anyone has incorporated this technology with sip and Asterisk?

The signaling server could limit the number of users
(by the way, I think the text chat goes trough the signaling server)
(socket.io)
I see in the code there's a configuration attribute config.rooms.maxClients
there you can set the max clients per room

@juancri thank you. I have read through the Asterisk Wiki, and WebRTC support is fine for audio, but still experimental for video. Thought I'd take a stab and ask here though

If I wanted to use this for my own app, what does simple webrtc use as a server? Would that be something I configure on my end?
Ie. what server does the client connect to?

You may need a TURN server to relay the media if both parties can not connect directly to each other

Yes.
Simplewebrtc.com has a "sandbox" TURN server just for testing which does not relay media, but can install your own.

if it fails (mainly because of NAT), it uses the TURN server
