We intend to make an open source application which requires dashboards and widgets
The whole widget creation part though is kinda tweaked, as it will run tasks on our server itself.
For example => we want to have a widget which has a csv parser, which inserts data into collections, and then in the widget creation page, we can choose our x-axis and y-axis as certain fields from a collection
Could something like this even be possible with dashku?

Hi Pratik, what you described definitely sounds possible, but my opinion is that it would be better to do that in a purpose-built application like you indicated, than to try and retrofit an existing application (i.e. Dashku) to do that. Dashku is open source, so you can read the source, understand how the pieces interact with each other, and then construct your app to provide this functionality. If you have any questions around what you're trying to achieve, feel free to ask.
