I've not had any chance to look at Rust, but it seems to tick lots of boxes, and I'd have something to get my teeth into.

My favorite (why is Gitter trying to correct this to the British English spelling?) programming language is Rust. If I was trapped on a desert island, I would probably build everything in C.
