Mmm, that looks wrong, it should just be '-DESP8266_WEMOS_D1MINI', as it's just looking for it to be defined, or did I miss something in your original error?

Yes, you are missing that it is used in
addServiceTxt("arduino", "tcp", "board", ARDUINO_BOARD)
In there it is a parameter of type char* or String. -> value should be including the quotes.
Do you know where the Arduino IDE saves the makefile, then I can check what the compile statement is from there.

It saves in a system temp folder with Windows. When I get back to my dev machine I will look. The value ESP8266_WEMOS_D1MINI is in a boards.txt file, so it looks like this is data for a script to build the makefiles. If ESP8266_WEMOS_D1MINI is supposed to be the actual text, then the command line needs to include quotes (not a command line expert on how to do this, but the first quote just states this is the value for the define (maybe single quote works for this), so ' then " then string, then ", then '? '"ESP8266_WEMOS_D1MINI"'

just thought about to use telegram-messenger to control an ESP. Do you think there is a way? or is it a dead end?
I know there is a bot-library for the mkr1000. But working on an ESP?
