@Makuna why is there any dependancy of the WS2812 to WiFi?
I will try your in any case. But I only need it for one LED and in every example I find this hint:
const uint16_t PixelCount = 4; // this example assumes 4 pixels, making it smaller will cause a failure

Eh? Its a BUS and many pixels can be on it (they have an in and out each). So you change that to the number you have on your bus.

@Makuna OK....
I tried your lib with the NeoPixelTest example as it is, without changes. One WS2812 at Pin 2, provided with 3,3V -> No function :-(
With Adafruit_NeoPixel.h i got results

The timing for sending out data is sensitive, ad WiFi can interrupt routines causing it to get malformed signals.
@brutzler Did you read the Wiki?

I read a lot in the last time. Brain hurts really. Do you think on something special?
The NeoEsp8266Dma800KbpsMethod only supports the RDX0/GPIO3 pin
Which is the default method.
The Pin is ignored on Esp8266 as it requires hardware support to make it function, and the hardware support has hardcoded pins.
You can ask these questions on my gitter channel so others here don't have to listen to the noise ;-)

How do I figure out the best address location to save some information to the simulated EPROM of the ESP? I have a 1M flash on my board.
