How do I look into errors that happen within exceptionless itself?

The webapi keeps throwing me back 500 errors when loading projects or orginizations or anything

and then set the internal project id of the project id you created
and then set the the new projects api key in the web.config as well
then look at the nlog config and tell it to log to exceptionless and rachet it up

via your web app create a new exceptionless project
call it Exceptionless or what ever
then set https://github.com/exceptionless/Exceptionless/blob/master/Source/Api/Web.config#L37 to the new project id you jsut created (get it from the url
