started making the watch support as a simple passthrough for inputs.dir and inputs.file
I think that's the wrong approach after putting it together. What I really want is a regex, which is what I'm used to from guard and other tools in Ruby land

The getFatalWarnings() is more complex than you'll need, but you rally just want to call patternize in there for you case. The next step is to coerce files.inputs to use the patterns.
For that you can potentially just do a project.fileTree(projectDir).matching { ... } and in matching you can checking that the filename matches one of the patterns.
You can also decide not to regex, but use Ant patterns instead - Gradle has built-in support for that.
