And also if it was to use IQueryable with extra methods added on it would allow developers to use the power of linq with rethinkdb

IQueryable isn't actually required to use LINQ syntax. If you use LINQ, it will automatically compile to extension methods that are named in a specific pattern, and, where possible, rethinkdb-net already supports those patterns. Check out https://github.com/mfenniak/rethinkdb-net/blob/0b11fd32a5db34a905d09bac11ae0c734c6d0859/rethinkdb-net-test/Integration/MultiObjectTests.cs#L818 for example -- these are a bunch of unit tests that are using the LINQ syntax to query against RethinkDB.
