carbon/DSC n00b here. just curious if this combo is something worth exploring for managing a 100+ workstation environment

It's definitely possible, but there may be better solutions. I don't manage desktops/laptops. I manage web applications and services, so that's where Carbon focuses its efforts. Take a look at Chocolatey. I use it as a software/package installation tool. There is also Boxstarter, but I haven't used that at all.

With DSC, your workstations can phone home periodically to get the latet configuration and update to it. That involves setting up a pull server and publishing configuration and modules needed by the workstations to it. The simplest pull server is a file share. The next level is an IIS website that includes auditing and other goodness.
