Wondering if I can maybe hook into some kind of API and allow a user to submit an article, then host approved articles some standard way.
Are the articles plain html in the end? Maybe a browser plugin that uploads the current article or something.
Could maybe even authenticate against the service using wallabag credentials, giving it permission to read the content a user chooses to submit.
Just spit-balling. Would be cool if that form of authentication could happen. Similar to how you can authenticate against Netlify with github credentials, allowing netlify to view selected repositories.

So something is strange here, since if I open the website, always the path /var/www/vhosts/web46819.ssd-space.de/wb.mdomann.tk/ is correct and valid. So for my understanding it should work.
I'm sorry but I don't know what to say. You could try to debug the PHP directly to see what is happening at the precise moment of the file should be there.
